The Mai Tai is perhaps one of the best examples of a cocktail that has a good combination of tropical flavours and where quality ingredients are important to get the right flavour. Our take on the Hawaiian Mai Tai is invigorated with a distinctive pineapple flair, courtesy of Devon's own Two Drifters Overproof Spiced Pineapple Rum. It is harmoniously blended with Two Drifters White Rum, adding layers of citrus with Triple Sec, sweetness with Orgeat Syrup, and a tangy kick with lime juice and sugar syrup. The result is refreshingly balanced Mai Tai that we like to say is "Pretty fly for a Mai Tai.

ABV: 15% | 100ml = 1.5 units

Ingredients

Two Drifters Overproof Spiced Pineapple Rum: A rich and fruity rum with irresistible notes of ripe pineapple, salted caramel, and crème brûlée, now enhanced with waste cacao husks for a delightful chocolatey colour and flavour..
Two Drifters White Rum: Crisp and clean with fresh notes of vanilla, apple, white pepper and lime zest.
Triple Sec Orange flavoured liqueur.
Orgeat Syrup With a distinct almond flavour this smooth syrup really brings this cocktail to life.

How To Serve

  1. Chill: Chill the bottle in the fridge to ensure the cocktail is refreshingly cool.
  2. Shake: Pour 10cl of the chilled cocktail into a shaker with ice (or shake in the bottle if a shaker isn't available) to blend the flavours thoroughly.
  3. Pour: Strain and pour the shaken mixture over crushed ice in a tiki glass. Garnish with a sprig of mint or pineapple leaves, smacking the mint to release its aroma, and place it atop the drink.

Tasting Notes

Aroma: The nose opens with a vibrant burst of pineapple from the overproof rum, intertwined with the subtle, refined notes of Two Drifters White Rum. Underlying these are hints of citrus zest from Triple Sec, complemented by the sweet almond allure of Orgeat Syrup, creating a captivating olfactory experience.

Palate: On the first sip, the lush, fruity essence of pineapple-infused rum takes centre stage, seamlessly melding with the smooth character of the white rum. The Triple Sec introduces a bright, citrusy counterpoint, while the Orgeat Syrup adds a velvety sweetness, creating a rich tapestry of flavours. The tang of fresh lime juice cuts through, offering a refreshing acidity that balances the cocktail's sweetness.

Texture: The Mai Tai presents a smooth, well-rounded mouthfeel, with the Orgeat Syrup lending a subtle creaminess that complements the spirited kick of the rums.

Finish: The finish is lingering and harmonious, with the sweet and fruity notes slowly giving way to a delicate, citrus-infused aftertaste, inviting another sip.

Overall Experience: This Mai Tai is a symphony of tropical flavours, expertly balanced to evoke the spirit of island escapades. It's a cocktail that's not just tasted but experienced, offering a palate-pleasing journey with every sip.

Food Pairing Suggestions

Pairing your Mai Tai with the right food can enhance both the drink and the dining experience. Here are some food pairing suggestions that complement the tropical and rich flavours of your Mai Tai:

  • Seafood Platter: Complement the Mai Tai's flavours with a selection of prawns, smoked salmon, and scallops, ideally accompanied by a tangy seafood sauce.
  • Spicy Thai Curry: The cocktail's sweetness and acidity beautifully balance the heat and richness of a Thai green curry, cleansing the palate with each sip.
  • Fruit Salad: A fresh fruit salad, perhaps with a hint of chilli and lime, can mirror the Mai Tai's tropical notes for a refreshing pairing.
  • Barbecue Ribs: Enjoy the Mai Tai with smoky barbecue ribs, where the cocktail's fruity and sweet elements complement the ribs' rich flavours.
  • Cheese Board: Pair with cheeses that have a hint of sweetness or nuttiness, such as Red Leicester or a mature Cheddar, to match the Mai Tai's complexity.
